Thai Coconut and Peanut Vinaigrette Dressing

The combination of Thai inspired flavours of peanut, soy sauce, rice wine vinegar and coconut milk, provides and sophisticated dressing that will match any choice of mixed greens

Ingredients:

½ cup (125 mL) Thai Kitchen Coconut Milk Lite

2 tsp (10 mL) Thai Kitchen Peanut Satay Sauce

2 tsp (10 mL) Thai Kitchen Premium Fish Sauce

1 tbsp (15 mL) Soy Sauce

4 tbsp (60 mL) Rice Wine Vinegar

2 tbsp (30 mL) White Vinegar

2 tbsp (30 mL) Canola Oil

To taste Club House Ground Black Pepper

To taste Sea Salt

Combine all ingredients in a jar and shake vigorously. Pour vinaigrette dressing over a mix of gourmet salad greens combined with fine strips of carrots, red pepper and cucumber. Toss gently to mix well and coat evenly. Serve immediately.
