Tenille Lafontaine Peanut Satay Veggie Lettuce Cups

The creamy peanut taste and crunch of these cups make this vegetarian recipe a healthy favourite for the kids.

Ingredients:

1 ½ cups (375 mL) Thai Kitchen Jasmine Rice

½ red pepper, diced

4-5 white button mushrooms, diced

½ cup (125 mL) sliced snow peas

1 tbsp (15 mL) Thai Kitchen Premium Fish Sauce

2 tbsp (30 mL) Thai Kitchen Peanut Satay Sauce

1 head Butter Lettuce

2 tbsp (30 mL) crushed peanuts

½ cup (125 mL) chow mein noodles

Directions:

Prepare Thai Kitchen Jasmine Rice according to package directions, set aside to cool.

Add red pepper, mushrooms and snow peas to hot skillet with Thai Kitchen Premium Fish Sauce and cook for 2-3 minutes.

Stir in Thai Kitchen Peanut Satay Sauce and continue to simmer for another 2-3 minutes then remove from heat.

Lay butter lettuce leaves on a plate and fill with a spoonful of rice, veggie mixture, then top with a sprinkle of peanuts and chow mein noodles.
