Brandi Yee Corn Fritter Minis with Sweet Chili Sauce

Served warm or cold, these mini corn fritters make a great snack. Dip them in a sweet chili sauce to give this Mexican dish some Asian flare.

Ingredients:

Olive oil, for frying

½ cup (125 mL) each all-purpose flour and corn flour

3 tbsp (45 mL) chopped cilantro

½ jalapeno, seeded and minced

1 clove garlic, freshly minced

¼ tsp (1 mL) each salt, baking soda and McCormick Gourmet Smoked Paprika

2 eggs, beaten w/ ½ tsp (2 mL) Thai Kitchen Fish Sauce

½ can (341 mL can) whole kernel corn

Thai Kitchen Sweet Chili Sauce

Directions:

Preheat oil in pan on stove. 

Mix all ingredients together except for the Thai Kitchen Sweet Chili Sauce. Drop by tablespoons into hot oil and use spoon to flatten into a patty. 

Fry each side until golden brown.  Transfer to paper towel lined plate to drain.

Serve warm or cold with Thai Kitchen Sweet Chili Sauce.
