Chicken Mango Satay

Ingredients:

4 large boneless, skinless chicken breasts (about 1 lb / 500 g)

Salt and pepper

2 firm ripe mangoes

Fresh mint leaves

Bamboo skewers or cocktail toothpicks

Directions:

All you do

  1. Season chicken with salt and pepper. Bake, broil or grill until internal temperature reaches 165°F (74°C). Cut into 32 (1 in / 2 cm) pieces.
  2. Peel mangoes. Cut flesh into 32 (1 in / 2 cm) pieces.
  3. Thread each skewer with a mint leaf, a piece of chicken and a piece of mango. Serve with Peanut Satay Sauce.
